Caramel Popcorn Recipe



Caramel Popcorn

Half Cup of Butter
Two Cups of Brown Sugar
Half Cup of Corn Syrup
One Teaspoon of Salt
Half Teaspoon Baking Soda
One Teaspoon Vanilla Extract
Five Quarts of Popped Popcorn (four cups in a quart)
Optional Nuts...We add Almonds and Peanuts

In a medium saucepan oven medium heat melt the butter, stir in brown sugar, corn syrup, and salt. Bring to a boil stirring constantly. Let boil without stirring for four minutes. Remove from heat and add vanilla and baking soda. Pour over popcorn stir (Use the largest pan or soup stock pan to mix together. I have a very large roaster which works great.) and then place in a shallow baking pan . Bake at two hundred and fifty degrees. Stir every 15 minutes. Bake for fifty minutes. remove and let popcorn cool  then break apart the clusters.
