Meatloaf filled with cheese, peppers, rolled, and topped with a homemade BBQ sauce

Busy Days Favorite Family Meatloaf



2 pounds of ground beef
Can substitute 1 pound beef for 1 pound ground vension, turkey, or veal
1/2 pound of ground sausage (optional)
1 whipped egg
1 small onion diced fine
 (I use a Pampered Chef quick chopper, but a food processor works great too!)
1/4 cup ketchup
1 TBS. mustard
1 sleeve crackers crumbs approx 1 and 1/3 cup
( We uses Ritz or Club. The kids love to help with this part. I place the crackers in a zip lock bag ( make sure the air is out or it will pop open) and let the kids stomp on them. make sure their are not large crumbs)
1/4 tsp salt and 1/2 tsp pepper
Mix together all the above ingredients in a large bowl using your hands...

Dice peppers or whatever you want to place inside your meatloaf. It not diced small like above you will need to saute them quick or your meatloaf will be crunchy not blended together.
I use a thin plastic cutting board with a little amount of water and flatten the meat loaf in a rectangle shape

We get creative with this recipe everytime sometimes we use cheddar cheese, jalapenos, red peppers, shredded carrots, zucchini..ect
In the one above we did 1 jalapeno, green pepper, asiago, pepper jack, and parmesan cheeses

Roll

Put into a loaf pan and press down on the top to seal it all together
Sauce
1/3 cup ketchup
3TBS brown sugar
1tsp mustard
dash of allspice, cloves, and nutmeg
Heat together till sugar is dissolved
Pour over meat Loaf


Bake at 350 for approx 1hour and 10minutes
To serve lift out of the loaf pan with with two spatulas and place on a platter. Garnish with thyme... 

This recipe can be made a day ahead and frozen
